It's a little known fact, but Perpignan's gypsy quarter is one of the world's strongholds of cockfighting.
These illegal fights take place discreetly, sometimes on the roofs of buildings.
The trimming of the feathers, as can be seen in this photo, is an important moment.
The thighs are shaved, the tail shortened, to make the fight even more impressive.
Bets on these fights sometimes reach crazy amounts.
I photographed the gypsy community of Perpignan, in French Catalonia, for a dozen years. On the Spanish border, these gypsies live a sedentary existence, sometimes in terrible poverty.
